When i did Shaymin quest, i didn't see the tree that change form. I tought i can change form after catch like rotom or kyurem. I wanna change Shaymin form what can i do?

You can change form at any time. If you want to change from easter form to normal form you do that at the Tree where you found Shaymin (after Suzuka Cave). If you want to change from land form to sky form you do that on route 224. (You can see how to get there in the Thread for last years Easter Event) I hope this helped.
