Also, given enough proof, would it be possible for a GM to get the pokemon back to me, even if the scammer was unwilling to give it back?

1-) When you accept the trade (the time when the green light)

2-) Trade completed system message.

 

You need to get a full screen image. These will be sufficient. When there is a theft, you can't take back the Pokemon. Don't ignore it.
