I bought a hat party red for 3m, and when the rollback happened, when I logged I was no longer in the bag nor in the Pokémon what to do? Please

The gold did not come back, and the hat disappeared.

Unfortunately nothing lost from connection issues/server crash gets recovered, have you tried checking the pokemon you received it on to see if it's holding it again?

 

In future should you get anything expensive or rare, it's advised to relog since that force saves your game, minimising anything being lost if something happens
