Staff cannot reset evolutions as stated here.

 

Quoting for visibility:

Pokemon cannot evolution at level 100

 

Unfortunately, staff cannot do anything for this case. You will need to check and make sure every requirement before go up to level 100. I will recommend evolution pokemon around level 97-98 for avoiding any unexpected issue.

As previous people have stated in this thread, there is no way for staff to reverse an evolution, as quoted here.

Unfortunately, staff cannot unevolve pokemon, so any evolution is final. You will need to check and make sure every requirement for evolution is met before reaching level 100. It's recommended to evolve pokemon around level 97-98 to avoid any unexpected issues.
