The boss drops vary, it comes down to luck. However, I do believe that Thor added a new script to the bosses, so if you beat them 3 times in a row, you get to choose your prize.

As TheGoat stated, different rewards have different chances of dropping, the rarer/better the reward, the less chance there is of receiving it. RNG plays a part here however i wish you good luck with future battles to get that little mushroom Pokemon :)
