My question is: What to do after you beat the Hoenn Champ?

You can hunt shinies, pink Pokemon on Pinkan Island, do the Vulcan Island quest if you haven't done that already. Go around and beat all the bosses. Make your own Pokemon team and try out PvP.

Start your own Guild or join one and participate in Guild events. There are lots of things to do.

 

or just wait for Sinnoh to be released...

How about you try to finish your Pokedex? :Angel:

There are quests to get Mew, celebi and Jirachi, missions to get access to Dragons den, Cerulean cave, Bosses are super stacked teams that you need to raise a large variety of pokemon for, filling out the pokedex is fun, and doing daily/weekly things like dig spots and excavation spots are also great.

Soon you will notice that in this game story covers only a minimum part of what you can really do.

As personal tip: make a list of what you can do now, many things have been posted in previous comments, but there are even more! After you have completed your list start from what you may enjoy more and link that activity with others.
