Hello,

To stop your Eevee from trying to evolve into Espeon, you need to lower it's happiness. You can do so by simply losing any battle(you can ask someone to fight you with a level 100 pokemon so it's over quickly) or trade your Eevee with someone you trust. Happiness resets back to 70 after trading. After that Eevee will evolve to Sylveon if you level it up on Love Island.
