Well, I have an Eevee, and today he was to evolve an a Espeon, but I'm looking for Umbreon, so I didn't evolve my eevee. Know how I can make it evolve an a Umbreon after that? Now my Eevee is lvl 43.

Eevee evolves into Embreon by having max happiness during Night time ( 20:00 - 04:00 )

Eevee evolves into Espeon by having max happiness during Day time ( 10:00 - 20:00 )

 

Evolution related to happiness will trigger once when the happiness is max.

So in order to make evolution to trigger again, you have to let your Eevee faint once (-5 happiness), then max happiness again during the appropariate time mentioned above.
