Hello,

I'm in the process of doing a big pidgeot quest, which requires a level 80 pidgey, but I accidentally let my pidgey reach level 100 and evolve into a pidgeot. Now what do I do to continue the quest because the npc doesn't accept my pidgeot

You need to catch a pidgey and give it back to the NPC and re-level it

You see, as @Doah kindly mentionned, unfortunately you will have to level another Pidgey again to level 80. Remember to show the NPC your Pidgey after catching it and BEFORE starting to level it.
