hard to answer since eevee can evolve into 8 different pokemons. Mostly used ones are timid or modest nature for jolteon, impish nature for umbreon, bold or calm nature for vaporeon, adamant nature for flareon, modest nature for espeon. The rest are harder to evolve.

It depends on which eevolution you want. Different evolution means different best nature.

Espeon: Timid/Modest

Umbreon: Bold

Espeon is always Modest or Timid, but for Umbreon it varies. Umbreon can be either Impish, Careful, Sassy, Relaxed, Bold, or Calm.

Umbreon is best as a tanky careful/sassy nature since it gets curse to buff it's df and also since he's more physical. Bold is better for vaporeon.

Umbreon - Any of +Def or +Spdef with -atk or -spe or -spatk

Espeon - Timid / Modest

Jolteon- Timid / Modest

Vaporeon - Any of +Def or +Spdef with -atk or -spe or -spatk

Glaceon - Modest

Leafeon - Adamant / Jolly

Flareon - Adamant / Jolly (jolly to be used with choice band *not coded*)

Sylveon - Any of +Def or +Spdef with -atk or -spe or -spatk for sweep set use Modest
