I've come across an Articuno completely randomly as I forgot what cave I was in haha

 

Question: legendary Pokemon, are these not to be caught?

 

Is it wise to go ahead and beat everyone I come across for the exp?

 

Or shall I leave them for maybe in the future when we can catch them?

These pokemon legend only for get exp. At the moment, you can catch mew, celebi and jiraichi (need do quest and you can check quest in forum at game guide). These legend you battle is need for seen data for quest of legend also, so you will need to beat them.

Legendaries can't be caught, except Mew, Celebi and Jirachi.

 

This is a MMO, you're not supposed to own any legendaries unlike the handheld editions.
