1. Boss battles are against one team, not two. Also, if I recall correctly, that guide is a bit outdated when it comes to the teams you may face in battle - for example, Pumpkin King only has the second team with Roserade/Yanmega/Bisharp etc now.

 

2. You cannot evolve after you first reach level 100 for level-up evolutions. If you had full happiness and clicked "No" when your Golbat initially leveled to 100, you will not be able to evolve it afterward. It is possible to evolve Pokemon at level 100, as long as you are careful to click "Yes" upon first leveling, but it's a bit risky (in case you accidentally hit "No," or the server crashes suddenly and the evolution data isn't saved properly upon logging back in). Instead, I would recommend evolving at 99 and using a Rare Candy to get to level 100.

1. It means random team will battle with you, not both.

2. You can still evolve at lv100 for nay pokemon requirment happy only (not level up) and trade evolve. But for happy pokemon, I recommend evolve it at level around 98-99 for avoiding any mistake or bug can happend.
