It's not a bad Idea but, isn't a mount suppouse to be a fast pokemon? As you will mount it to travel? I don't think that have much sense puting a slow poke, and make it go fast jajajaja.

 

Maybe Sawsbuck would be a better idea:

It really should be a Christmas type pokemon so it applies to the event, my suggestion: Sawsbuck in Winter form. https://prntscr.com/94r24o It looks similar to Stantler but more 'Christmas like'
