I know there´s a boss to get a second chance, if i beat him can i try to catch it?

Since you "logged out" during the battle, the battle counts as over and so you have to beat Boss Nikola in Trainers Valley to get another chance for Celebi, yes.

 

Boss Nikola:

- Requirement : Lose your chance to catch legendaries Pokemon( Mew/Jirachi/Celebi)

 

He has quite the hard team, so brace yourself.

- Boss team (Lv120) : Mewtwo, Mega Charizard X, Kyogre, Deoxys, Arceus, Dragonite

Yes,you have to beat Nikola to have a chance to catch it.
