I think you are a little confused in regards to the happiness value. The 201 you see there is the HP. Max Happines for all pokes is 255, the numerical value is not showed on the pokemon card but you can check it by typing "/happy (1-6 position of your poke)" on the chat window.

I think the Dig Spots are Shinny locked, however you get a shinny Honedge from the "shinny grave" in the excavation Haunted Site.
