Good day! Not sure if these ideas will be enjoyed by all, but thought of sharing, cause why not.

 

- Spoink (player holds onto it almost like a pogo stick)

- Kangaskhan (player sits in the pouch)

- Crustle (player sits on-top of the block of rock/dirt)

Fixed a typo!

I also like to add some mount suggestions

Land :

- Steelix (Player sits on head) "like some other pokemon games"

- Gardobor (Player sits on head)

- Golurk (Player sits/stands on shoulder)

- Magnezone (Player sits in it like driving UFO)

Surf :

- Lotad (Player sits on the leaf)

- Starmie (Player sits on top of starmie "face up/down" and walked like fan)

- Swanna (Player sits on the body)

- Gyarados "Revamp" (Player sits on head)

 

I can only hope...nothing more xdd

What about Pelipper mount that you can use on land or surf but double price like 100-200 coins

I think most of these should be doable except probably the Spoink. The spritesheet of the trainer in the mount sets is something that cannot be changed in position which would sort of limit how much it can bounce. But there are certainly fun ideas in here.
