The requirements for certain quests include, x amount of registered pokemon in the pokedex.

Either SEEN pokemon like for cerulean cave or CAUGHT.

My question is, if you have not caught a pokemon, does trading for it fulfill the requirement for CAUGHT pokemon, to start a quest or unlock an area?

For example, is the requirement 141 caught OR owned pokemon in kanto dex?

Caught data is received the moment you have the Pokémon in your possession, through any means. Whether it's catching it yourself, evolving into it, receiving it as part of a trade, or even as a lend. It will all count towards caught data and will be reflected in your Pokédex.
